Anzac Biscuits

Ingredients

  • 1 cup flour

  • 1 cup rolled oats

  • 1 cup sugar

  • 2/3 cup desiccated coconut

  • 3 tablespoons golden syrup 

  • 125 grams butter

  • 2 tablespoons boiling water

  • 1 teaspoon baking soda

Method

  1. Preheat oven to 160’ regular bake

  2. Line 2-3 baking trays with baking paper

  3. Combine flour, oats, sugar and coconut in a large bowl.  

  4. Heat golden syrup, butter and boiling water together until the butter dissolves then add the baking soda-the mixture will fluff up

  5. Add the liquid mixture to the dry ingredients and mix well to combine

  6. Roll the mixture into small balls, a little smaller than a golf ball

  7. Place on baking trays, leaving room between the dough balls for spreading as they cook

  8. Lightly flatten the balls with the back of a fork or damp fingers

  9. Bake 25-30 minutes until golden brown

  10. Remove from the oven and cool on the baking trays-the cookies will harden as they cool

  11. Store in an airtight container or can be frozen for later use


    TO SERVE

Great by themselves, dipped in chocolate or as the base of an ice-cream sandwich!
