Berry Compote
This compote is a great addition to a meringue based dessert, an ice cream sundae, on top of yoghurt or even to elevate the humble bowl of porridge!
Serving Size : Makes 1 medium sized jar
Prep time : 5 minutes | Ready in : about 1 hour
Ingredients
1x 500g bag frozen raspberries (or other type or a mixture)
1 cup caster sugar
1 bay leaf
1 vanilla pod
Method
Put all the ingredients in a medium sized saucepan and bring to a simmer
Simmer gently for approximately 20 minutes or until slightly thickened (the mixture will thicken slightly on cooling)
Allow to cool and transfer to a clean, airtight jar and store in the fridge
Remove the bay leaf and vanilla pod as you are serving
